A friend of mine from Dublin gave me some inside info on him:

"Hi Tammy I'll let you into a secret the chap that you photographed with his horse and cart is Ollie Bulger a well known character from the Crumlin area of Dublin.
Ollie used to be a scrap dealer before one needed a licence to do so. Always capable of turning a bob or two Ollie has turned his attention to releving tourists of the odd euro (in a nice way) by posing with his horse and cart for photos near the storehouse enterence.
As it happens I have known the gent concerned for many years, mild mannered and courtious he is reputed to be one of the richest residents of the Crumlin area!

This guy was playing Steptoe Snr. for all the tourists. He was actually very cheerful and chatty. The €1.50 in loose change I put his way helped.

This was taken at the Guinness Storehouse in Dublin. It's 4 TV screens surrounded by mirrors. One of the screens was out when we were there so I added a glass of Guinness to fill the empty space. I guess you could say a Glass of Guinness fills your empty spot. :-D

PS....The photo of the glass was taken up in the lounge and I added it in photoshop.
